Sun dried tomato quinoa bowl – healthy lunch bowl, ideal for meal prep
Ingredients

Salad
- 2 cups cooked quinoa
- 1/2 cup sun-dried tomatoes
- 1 lb heirloom tomatoes, rinsed and cut in halves
- 1 avocado, pitted and halved
- 1 tbsp pine nuts
Dressing
- 1/4 cup olive oil
- salt & pepper to taste
- 2 tbsp balsamic vinegar
- 1/2 lemon, juiced
- 1 tsp mustard
Instructions
- Make the dressing by combining all the ingredients. Put aside.
- In a large bowl mix all the ingredients.
- Top with dressing
- Serve at room temperature
