8-MIN IMMUNE BOOSTER PASTA - Vegan easy and quick meal for everyday lunch or dinner

Ingredients
  • 1 lb gluten-free pasta
  • 1 large onion, peeled and diced
  • 1 lb cherry tomatoes
  • 1 lb shiitake mushrooms, washed
  • 1 lb spinach
  • 1 tbsp avocado oil
  • 4 garlic cloves, diced
  • Salt & pepper to taste
  • 1 tsp cumin (optional)
  • 1 tsp smoked paprika (optional)
  • 1 tsp turmeric (optional)
  • Truffle salt (optional)
Instructions
  1. Cook the pasta according to packaging.
  2. In a large sautéed pan, add spinach, oil, onions, garlic, tomatoes, mushrooms and spices.
  3. Cook for 5-10 min or until juicy on medium high heat.
  4. Add coked pasta and mixed well.
  5. Add seasoning.
  6. Add more spices if necessary.
  7. Enjoy warm.
