3-ingredient Banana Quinoa Muffins - super easy and healthy muffin, ideal as a power snack!

Ingredients
  • 2 cup cooked quinoa
  • 2 mashed very ripe bananas
  • 1½ cup oats
  • Optional: ½ cup chocolate chip, nuts or berries
Instructions
  1. Preheat oven at 375.
  2. Grease muffin pan or use muffin parchment paper forms
  3. Mix all ingredients in a large bowl. Add toppings if wanted.
  4. Fill each portion to the top. The muffins won't rise.
  5. Bake for 30 to 35 minutes until golden brown.
  6. Store in fridge for up to 3 days. Reheat at 375 in the oven. Store in freezer for up to 1 month.
