Sun dried tomato quinoa bowl - healthy lunch bowl, ideal for meal prep

Ingredients
Salad
  • 2 cups cooked quinoa
  • ½ cup sun-dried tomatoes
  • 1 lb heirloom tomatoes, rinsed and cut in halves
  • 1 avocado, pitted and halved
  • 1 tbsp pine nuts
Dressing
  • ¼ cup olive oil
  • salt & pepper to taste
  • 2 tbsp balsamic vinegar
  • ½ lemon, juiced
  • 1 tsp mustard
Instructions
  1. Make the dressing by combining all the ingredients. Put aside.
  2. In a large bowl mix all the ingredients.
  3. Top with dressing
  4. Serve at room temperature
