ALMOND FINANCIER AND LEMON CUSTARD

Financier
  • 150g of sugar
  • 3 eggs
  • 150g of almond flour
  • ½ cup of oil
Custard
  • 1 lemon
  • 90g of sugar
  • 2 tbsp of oil
  • 2 eggs
Instructions
Financier
  1. Preheat oven at 355F
  2. Beat eggs and sugar.
  3. Add almond flour and mix completely until having a smooth dough
  4. Add oil until having a homogeneous mix.
  5. Use a 2 inches (5cm) high pan.
  6. Bake for 20-25 minutes.
Custard
  1. Pour lemon juice, oil and sugar in a saucepan on a very low heat.
  2. Mix until having everything melted.
  3. On the side, beat eggs, then add in the saucepan.
  4. Let the cream get thicker slowly.
  5. Let it cool and reserve it in the fridge.
Assemble
  1. Spread the custard nicely on the small financier.
  2. Add a raspberry on the top and powdered sugar.
