Description

Eggplant caviar with pomegranate seeds – Delicious vegan and gluten free sweet and sour tasty appetizer


Ingredients

Scale
  • 1 large eggplant
  • 1 tbsp of olive oil
  • 1 tbsp of cumin
  • 1 tsp of mustard with seeds
  • salt & pepper to taste
  • 1 garlic glove
  • 1 cup of pomegranate seeds

Instructions

  1. Slice eggplant in half
  2. Place on parchment paper face down with garlic
  3. Bake at 500F for 30 minutes
  4. When baked, return and grate the inside
  5. Place the flesh in a large bowl with garlic (the outside should have burn so keep only the inside)
  6. With two knives (one in each hands, cut the flesh until having a homogeneous paste
  7. Season with mustard, salt, pepper and cumin
  8. Top with the pomegranate seeds
