- 1 lb gluten-free pasta
- 1 large onion, peeled and diced
- 1 lb cherry tomatoes
- 1 lb shiitake mushrooms, washed
- 1 lb spinach
- 1 tbsp avocado oil
- 4 garlic cloves, diced
- Salt & pepper to taste
- 1 tsp cumin (optional)
- 1 tsp smoked paprika (optional)
- 1 tsp turmeric (optional)
- Truffle salt (optional)
Instructions
- Cook the pasta according to packaging.
- In a large sautéed pan, add spinach, oil, onions, garlic, tomatoes, mushrooms and spices.
- Cook for 5-10 min or until juicy on medium high heat.
- Add coked pasta and mixed well.
- Add seasoning.
- Add more spices if necessary.
- Enjoy warm.
