- 2 large portobello mushrooms
- 2 eggs
- Salt & pepper to taste
- Olive oil
- Peel and wash portobello. Break egg in it.
- Bake for 25 minutes or until egg is cooked at 400 degrees.
- Season with salt, pepper and olive oil.
- Enjoy with an heirloom tomato salad with a olive oil basil dressing!
