EGGPLANT FRIES WITH TAHINI DRESSING

Description

Delicious easy appetizer, ideally served warm.


Ingredients

Scale
  • 1 large eggplant
  • 3 whole eggs
  • 2 tbsp of cumin powder
  • 1 tbsp of tahini paste
  • 1 tbsp of honey
  • 2 tbsp of extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Cut edges of eggplant.
  2. Slice in fries size.
  3. Mix egg and cumin.
  4. Soak eggplant pieces and dispose on parchment paper.
  5. Bake for 40 minutes at 450F.
  6. Reverse fries at half the time to allow the other side to bake.
  7. Prepare dressing by mixing tahini, olive oil and honey.
  8. Add salt and pepper.
  9. When eggplant ready, add to a serving plate.
  10. Pour dressing on top and enjoy!
