CREAMY MUSHROOMS SPINACH GRAIN BOWL – healthy vegan and easy high in nutrient dish
Ingredients
Scale
- 2 cups raw spinach, rinsed
- 2 cups cooked quinoa (or your favorite grain)
- 1 lb mushrooms, rinsed
- 1 cup non dairy milk
- 2 garlic cloves, minced
- 1 cup chestnut, peeled and ready to eat (optional)
- 1 tsp cumin
- 1 tbsp mustard
Instructions
- In a large pan, add garlic and mushrooms with 1/4 cup water. Cook until tender
- Add spinach and when soft, add milk, mustard and cumin. (Add chestnuts)
- Season with salt and pepper.
- Eat at room temperature
