CREAMY MUSHROOMS SPINACH GRAIN BOWL – healthy vegan and easy high in nutrient dish


Ingredients

Scale
  • 2 cups raw spinach, rinsed
  • 2 cups cooked quinoa (or your favorite grain)
  • 1 lb mushrooms, rinsed
  • 1 cup non dairy milk
  • 2 garlic cloves, minced
  • 1 cup chestnut, peeled and ready to eat (optional)
  • 1 tsp cumin
  • 1 tbsp mustard

Instructions

  1. In a large pan, add garlic and mushrooms with 1/4 cup water. Cook until tender
  2. Add spinach and when soft, add milk, mustard and cumin. (Add chestnuts)
  3. Season with salt and pepper.
  4. Eat at room temperature
