I hear many people saying they eat pomegranate only for Rosh Hashanah but this delicious fruit deserves to be eaten all year long! I really love to mix it with any kind of salad (kale, spinach, arugula..) and in this recipe the mix with the cabbage gives not only a delicacy for the eyes but also for the mouth. The scallions add some spicy to the recipe and contrast well with the sweet taste of the pomegranate seeds.
