Sun dried tomato quinoa bowl – healthy lunch bowl, ideal for meal prep
In this recipe I used quinoa but feel free to replace by any grain you like/prefer. I like how easy this recipe is to put together as long as you have cooked quinoa on hand. This is the perfect bowl if you’re looking for meal prep ideas.

Sun dried tomato quinoa bowl – healthy lunch bowl, ideal for meal prep
Ingredients

Salad
- 2 cups cooked quinoa
- 1/2 cup sun-dried tomatoes
- 1 lb heirloom tomatoes, rinsed and cut in halves
- 1 avocado, pitted and halved
- 1 tbsp pine nuts
Dressing
- 1/4 cup olive oil
- salt & pepper to taste
- 2 tbsp balsamic vinegar
- 1/2 lemon, juiced
- 1 tsp mustard
Instructions
- Make the dressing by combining all the ingredients. Put aside.
- In a large bowl mix all the ingredients.
- Top with dressing
- Serve at room temperature
